Fishermen at Grand-Baie. TIn Mauritius, it is very easy to make a shellfish cure and fishes (paved face, crown-dog, tread-fin..), in cari or simply roasted. The cari is a meat or a fish turned russet and cooked in oil, strongly spiced with massalé and saffron. It is served with white rice, grains (beans, lenses), herbs and rougail (sauce containing peppers, tomatoes, groundnuts and fruits).
