Merchants of rice in the souks of Aswan. The cotton, which occupies approximately 20% of the cultivated surface of the country, largely dominates the agricultural production since XIXth century. Nevertheless, in order to decrease the food expenditure of the country, the surfaces devoted to the culture of cotton were reduced for the benefit of fruit, cereal and oleaginous cultures.
