The Egyptian kitchen is not very varied. Apart from the kebab, common in all Middle East, there exists the foul, national dish containing large brown broad beans inflated in water, simmered in oil and aromatized; the meloukhia, green grass boiled which is used as seasoning to rice and chicken.
